OUR INGREDIENTS
We like pure food, and want you to feel good about everything you eat at Little Choc Apothecary.
To make sure we know exactly what goes into our ingredients, we make as many things as we can ourselves. Our homemade items include coconut and almond milks, cashew cheese, coconut bacon, Newtella (hazelnut chocolate spread), raw cherry chia jam, as well as all sauces, and syrups.
The things we cannot make in-house, we source from high quality, reputable sources, and make sure to read ingredient labels carefully. We go organic whenever possible, choose fair trade when the option presents itself, avoid GMOs, and anything with gums, or other unnatural binders and thickeners.

milksCoconut: made from organic coconut and purified water. It's that simple!
Almond: organic almonds, purified water, a dash of salt, and organic dates to add a hint of sweetness. Soy: from the distributor's website: "Unsweetened EDENSOY is the highest in whole soy protein of all soymilk with 12 grams per serving and it provides 4.5 grams of essential fatty acids (EFAs) - omega 3, 6, and 9. While it created the category in 1983, EDENSOY remains the only U.S.A. soymilk that is properly prepared to nurture human beings. flourMost gluten-free flour mixes use xanthan gum to add a binding and thickening effect. Xanthan gum is produced from fermented glucose, sucrose, and lactose, and is technically considered safe for consumption by the FDA. However, the medium used for fermentation is usually GMO soy or corn, and we prefer something a little more natural. For that reason, we blend our own gum-free, gluten-free flours using Bob's Red Mill Sorghum and Rice flours, Arrowroot, and Potato Starch.
Sorghum: a powerhouse of nutrition. High in protein, iron, fiber, and antioxidants that support cardiac health. Rice: good source of magnesium, phosphorus, manganese, selenium, iron, folic acid, thiamine and niacin. Arrowroot: digestion aiding root that was used medicinally in Victorian times to draw out poison and toxins when applied to wounds, wean children off of mother's milk, and nourish those with dietary restrictions. It is also a powerful antidote to vegetable poisoning. Potato Starch: made from starch extracted from top-quality potatoes, and is known as a type 2 resistant starch. It resists digestion, which means it is passed through the small intestine undigested, and is then fermented in the large intestine, stimulating blood flow to the colon, increasing nutrient circulation and mineral absorption, as well as inhibiting growth of pathogenic bacteria. |
maple syrupOur goods are sweetened with pure Vermont maple syrup, organic coconut sugar, or a combination of both. We source our syrup directly from a solar-powered, family farm in Randolph, VT--Silloway Maple. Paul, Partner and Manager at Silloway, was very active in the Orange County and Vermont state organizations over many years. He was named Sugarmaker of the Year, and his grandson, David Lambert, was the 2012-2013 Maple Ambassador. They may be the reason people love our food so much!

syrups & concentratesWe never use commercial flavoring syrups for our specialty drinks. Everything is house-made from real spices, herbs, and sauces. When you buy our chai latte, for example, know that it's made with actual, house-blended chai tea, and ground-up spices; when you get the mocha, you're drinking homemade chocolate sauce with your espresso and steamed milk.

a note on frozen fruit
While we only use fresh fruit and berries for our crepe filling, we do blend some frozen ingredients into our smoothies. Don't be afraid of frozen! Frozen fruit and vegetables are generally picked at peak ripeness, when they are most nutritious. Whereas fresh fruit and vegetables are often picked before they are fully ripe to allow time for transportation. This results in a slightly less nutritious product. This is another reason why we try to buy local as much as possible, and we embrace frozen!
