dresS code & lateness policy
DRESS CODE:
We don’t allow sportswear, which means no hoodies, sweatpants, yoga pants/sports bras. No large logos. If you have a shirt that buttons up, make sure it’s buttoned, so it’s not flapping around your apron. Don’t wear anything with loose sleeves, so it doesn’t get into the food. Always look tidy, and well put together! In accordance with NYC health code, we require hair to be tied back in a bun or braid, and covered at all times - we have Little Choc hats available for you to wear. |
LATENESS:
15-20 min lateness = 1 pt 21-40 min lateness = 2 pts 41+ min lateness or no show = 3 pts Points are doubled on weekends or holidays. When you accumulate 6 points, you are put on a 30-day probation. During that probation period, any additional points are cause for automatic termination. You can reset points back to 0 if you arrive to work 10 minutes early for 14 consecutive days. |

SWIRLING CREPES
As you are swirling, keep in mind that we are making crepes, not pancakes. This means that the crepe should be very thin, particularly at the edges. Important for Kitchen/Barista position. |

TWO CREPES AT ONCE
This video goes over how to make two crepes at once, which is what you'll be doing when it's busy at Little Choc. It also goes over how to fill the Burrito crepe, as well as a Room For Mushroom crepe. Important for Kitchen/Barista position. |

MATCHA LATTE
Important things to note about matcha: it clumps! In order to whisk it into a smooth consistency, you need to use the right size pitchers. Never, EVER use the small metal cups that we use for brewing iced tea to make matcha, because that will leave it clumpy. Make sure to use milk steaming pitchers for this task. Important for Kitchen/Barista & Server positions. |

BAKING A CAKE
This video goes over how to bake a cake. To slice the cake, cut the entire cake in half, then cut one of the halves in half to make two quarters, and then cut one of the quarters in half. Don't slice the entire cake at once, so it remains as fresh as possible. Important for Kitchen/Barista position. |

USING A CREPE CONE
This video goes over how to put a crepe inside a crepe cone for to go orders. A cone allows the person to eat the crepe on the go! Important for Kitchen/Barista position. |

This video goes over how to make the perfect Jacked Up crepe. It's important to note that the onions and peppers are kept in the fridge, so they need to go on the bottom of the crepe, so the warming griddle can start heating them up while you add the rest of the fillings. It's important to pay attention to the quality of the ingredients that we are serving. If ever in doubt, ask yourself--would you be happy to pay for a meal with such ingredients?
